Stuffed Appetizer Peppers with Salsa

This recipe is recommended for 4 servings


  • 4 red or green bell peppers
  • 1 (8-ounce) package cream cheese, softened
  • 1/4 cup mayonnaise
  • 1 clove garlic, minced
  • 1 cup CHI-CHI'S® Thick & Chunky Salsa


  1. Remove tops from bell peppers. Cut peppers in half; remove seeds. Cut each pepper half into 4 to 6 pieces each, depending on size of peppers.
  2. In small bowl, combine cream cheese, mayonnaise and garlic; mix well. Drop small spoonful of cream cheese mixture onto each bell pepper piece.
  3. Broil bell pepper pieces 3 to 4 minutes or just until cheese mixture begins to bubble. Top each appetizer with salsa to serve.
  4. Heat broiler. Broil bell pepper pieces 3 to 4 inches from heat source 4 to 5 minutes or just until surface starts to blister. Remove from oven; turn pepper pieces skin-side-down.
