Grilled Tomatoes with Pepperoni

  • 3 tablespoons olive oil
  • 1 teaspoon minced garlic
  • 4 tomatoes, cut in half
  • 1 cup shredded 3-cheese blend (Parmesan, Asiago and Romano)
  • 16 slices HORMELĀ® Pepperoni
  • 1 tablespoon dried thyme leaves


  1. Oil grill grate; prepare grill for high heat. Line baking sheet with parchment paper. Heat broiler.
  2. In bowl, combine oil and garlic; mix well.
  3. Place tomatoes face-down on grill. Grill 4 to 5 minutes. Turn tomatoes over; spoon oil mixture into tomatoes. Grill 3 minutes longer. Remove from grill to baking sheet.
  4. Place 2 tablespoons cheese on each tomato half, pressing some of cheese into cavity of tomato. Top each with 2 slices pepperoni; sprinkle with thyme.
  5. Broil tomatoes 2 to 3 minutes or until cheese is melted and pepperoni is hot. Serve immediately.
