Bacon and Poached Egg

Ingredients
4 large eggs
7 tablespoons balsamic vinaigrette, divided
4 cups baby salad greens
12 slices HORMELĀ® Fully Cooked Bacon
4 slices bread, toasted
Directions
Place eggs in egg poacher or slide eggs into pan of simmering (not boiling) water and 1 tablespoon vinaigrette. Cook to desired doneness.
In bowl, toss together salad greens and remaining 6 tablespoons vinaigrette. Divide evenly among 4 plates.
Microwave bacon according to package directions.
On each plate, serve 3 slices bacon and 1 slice toast topped with poached egg.
