Beef Roast Salad with Greek Salsa

Ingredients

1 (15-ounce) package Hormel® Beef Roast Au Jus Entree

4 Roma tomatoes, coarsely chopped

24 Peloponnese® Kalamata Olives, pitted and coarsely chopped

1 (12-ounce) jar Greek salad dressing with feta cheese

Mixed salad greens
Directions

Microwave beef roast au jus according to package directions for 2 minutes.

Meanwhile, to make salsa, in bowl, combine tomatoes and olives. Stir in dressing.

Carefully pour contents of beef package into plastic tray provided. Pour off au jus; discard. With two forks, shred beef.

In large bowl, toss together salad greens and salsa; divide among 4 chilled salad plates. Divide shredded beef among salads.
