Ingredients

  • 4 large baking potatoes
  • 1 (5-ounce) can Hormel® Chunk Ham, drained and flaked
  • 1 cup broccoli florets
  • 1 cup sour cream with chive and onion
  • 1 cup shredded sharp Cheddar cheese, divided

Directions

  1. Microwave baking potatoes on HIGH (100%) 12 to 14 minutes or until fork-tender. Wrap in aluminum foil; let stand 5 minutes.
  2. Unwrap potatoes. Slice away skin from top of each potato; carefully scoop out potato, leaving shells intact.
  3. In bowl, mash potatoes. Add ham, broccoli, sour cream and 1/2 cup cheese; stir well.
  4. Stuff potato shells with mashed potato mixture; sprinkle with remaining 1/2 cup cheese. Microwave on HIGH (100%) 2 to 3 minutes or until cheese is melted.
