Ingredients

  • 2 tablespoons vegetable oil
  • 2 green bell peppers, cut into 1/2-inch pieces
  • 2 red potatoes, diced
  • 2 cloves garlic, minced
  • 1 (14.5-ounce) can Cajun-style stewed tomatoes, undrained
  • 1 (15-ounce) can whole kernel corn, drained
  • 1 (15-ounce) can HORMEL® Chili No Beans
  • 1 1/2 teaspoons Creole seasoning
  • Chopped fresh cilantro

Directions

  1. In large skillet, heat oil over medium-high heat. Add bell peppers, potatoes and garlic; sauté 4 to 5 minutes or until bell peppers are just tender.
  2. Stir tomatoes into skillet; cover. Reduce heat; simmer 20 to 25 minutes or until potatoes are tender. Stir in corn, chili and Creole seasoning; simmer until heated thoroughly. Sprinkle with cilantro.
