This recipe is recommended for 4 servings
2 tablespoons vegetable oil
2 green bell peppers, cut into 1/2-inch pieces
2 red potatoes, diced
2 cloves garlic, minced
1 (14.5-ounce) can Cajun-style stewed tomatoes, undrained
1 (15-ounce) can whole kernel corn, drained
1 (15-ounce) can HORMEL® Chili No Beans
1 1/2 teaspoons Creole seasoning
Chopped fresh cilantro
Directions
In large skillet, heat oil over medium-high heat. Add bell peppers, potatoes and garlic; sauté 4 to 5 minutes or until bell peppers are just tender.
Stir tomatoes into skillet; cover. Reduce heat; simmer 20 to 25 minutes or until potatoes are tender. Stir in corn, chili and Creole seasoning; simmer until heated thoroughly. Sprinkle with cilantro.
