Ingredients

  • 6 large eggs
  • 1/3 cup milk
  • 2 tablespoons chopped fresh basil
  • 2 tablespoons chopped fresh oregano
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 4 slices Hormel® Black Label® Bacon, cut into 1-inch pieces
  • 1 cup small broccoli florets
  • 1/2 cup chopped red bell pepper
  • 1/2 cup chopped onion
  • 1/2 cup shredded Swiss cheese

Directions

  1. In bowl, beat together eggs, milk, basil, oregano, salt and black pepper.
  2. In large nonstick skillet, cook bacon over medium heat 8 to 10 minutes or until crisp. Add broccoli, bell pepper and onion; cover. Cook, stirring occasionally, 3 to 5 minutes longer or until vegetables are crisply-tender. Reduce heat to low.
  3. Pour egg mixture into skillet; cover. Cook 8 to 10 minutes or until center is set, lifting edge occasionally to allow uncooked eggs to flow to bottom of skillet. Sprinkle with cheese; cover. Cook 1 to 2 minutes longer or until cheese is melted.
  4. Cut frittata into wedges to serve.
