Ingredients

This recipe is recommended for 4 servings
  • 1 (5.5-ounce) package au gratin potatoes
  • 2 tablespoons butter
  • 2 (5-ounce) cans Hormel® Chunk Chicken, undrained
  • 1 (10-ounce) can diced tomatoes and green chiles
  • 1/4 cup chopped green onions
  • 1 (2.25-ounce) can sliced ripe olives, drained
  • 1 cup tortilla chips, broken

Directions

  1. Heat oven to 400°F.
  2. Prepare potatoes according to package directions omitting milk and using 1 1/2 cups boiling water and the butter. Stir in chicken, tomatoes, onions and olives. Spoon mixture into casserole.
  3. Bake casserole 35 minutes or until potatoes are tender. Sprinkle with chips.
