This recipe is recommended for 4 servings
1 large Granny Smith apple, peeled, cored and chopped
1 cup golden raisins
1/2 cup coarsely chopped walnuts
4 Hormel® Always Tender® Thick Center Pork Chops
1 tablespoon vegetable oil
1 tablespoon butter
Salt and pepper, to taste
Directions
Heat oven to 350ºF.
In bowl, mix apple, raisins and walnuts.
Carefully cut slit or pocket in side of each pork chop; season chops with salt and pepper. Stuff 1/4 of fruit mixture into pocket of each chop.
In ovenproof skillet, heat oil and butter over medium-high heat until butter is foamy. Add pork chops; cook until browned on each side. Tuck any loose stuffing back into chops with spoon.
Bake stuffed pork chops 15 to 20 minutes or until pork chops are done and apples are tender. Pour skillet juices over chops before serving.
