This recipe is recommended for 6 servings
4 large eggs, beaten
2 cups shredded Cheddar and Monterey Jack cheese blend
3/4 cup small curd cottage cheese
1 (4.25-ounce) can CHI-CHI'S® Diced Green Chilies
1/4 cup chopped onion
1/4 cup chopped red bell pepper
1 (15-ounce) can Hormel® Corned Beef Hash
1/3 cup dry breadcrumbs or finely crushed buttery crackers
Directions
Heat oven to 375ºF. Lightly grease 9x9-inch baking dish.
In bowl, combine eggs, shredded cheese, cottage cheese, chilies, onion and bell pepper; mix well.
In separate bowl, combine hash and 1 cup egg mixture. Stir in breadcrumbs.
Spread hash mixture in baking dish. Top with remaining egg mixture. Bake 35 to 40 minutes or until set. Serve with salsa, if desired.
