Ingredients

  • 4 large eggs, beaten
  • 2 cups shredded Cheddar and Monterey Jack cheese blend
  • 3/4 cup small curd cottage cheese
  • 1 (4.25-ounce) can CHI-CHI'S® Diced Green Chilies
  • 1/4 cup chopped onion
  • 1/4 cup chopped red bell pepper
  • 1 (15-ounce) can Hormel® Corned Beef Hash
  • 1/3 cup dry breadcrumbs or finely crushed buttery crackers

Directions

  1. Heat oven to 375ºF. Lightly grease 9x9-inch baking dish.
  2. In bowl, combine eggs, shredded cheese, cottage cheese, chilies, onion and bell pepper; mix well.
  3. In separate bowl, combine hash and 1 cup egg mixture. Stir in breadcrumbs.
  4. Spread hash mixture in baking dish. Top with remaining egg mixture. Bake 35 to 40 minutes or until set. Serve with salsa, if desired.
