Ingredients

  • 1 (13-ounce) jar Peloponnese® Roasted Florina Sweet Pepper Strips, drained
  • 6 ounces Peloponnese® Kalamata Pitted Olives, drained and cut in half
  • 1/4 cup chopped red onion
  • 2 cloves garlic, minced
  • 1/4 cup chopped fresh flat-leaf parsley
  • 2 tablespoons chopped fresh basil
  • 1/4 cup mild olive oil
  • 3 tablespoons lemon juice
  • 1 cup crumbled feta cheese, if desired
  • 1 Hormel® Always Tender® Lemon Garlic Pork Loin Filet, prepared according to package directions and sliced

Directions

  1. In bowl, combine roasted peppers, olives, onion, garlic, parsley, basil, oil and lemon juice. Gently stir in cheese. Cover bowl; refrigerate several hours or overnight to allow flavors to blend. Serve over pork slices.
