Ingredients

This recipe is recommended for 4 servings
  • 2 (14.5-ounce) cans diced tomatoes with green chiles
  • 2 (10-ounce) cans cream of tomato soup
  • 12 slices Hormel® Fully Cooked Bacon, coarsely chopped and divided
  • 1 cup whole milk
  • Salt and pepper, to taste

Notes

  1. Accompany this soup with a basket of warm flour tortillas and butter for all to share.

Directions

  1. In large saucepan, combine tomatoes and tomato soup. Add 3/4 of chopped bacon and the milk. Bring to a boil over medium heat, stirring occasionally.
  2. Remove saucepan from heat; cover. Let stand 5 minutes to develop flavors. If soup is too thick, add a little hot milk. Season with salt and pepper.
  3. Divide soup among 4 bowls; garnish each with remaining 1/4 of bacon. Serve with dollop of light sour cream and sprinkle with chopped fresh cilantro, if desired.
