6 large eggs
1 cup HORMEL® CURE 81® Diced Ham
1/2 cup diced bell pepper
1/2 cup diced onion
1/2 cup shredded Cheddar cheese
Vegetable oil
Directions
In large bowl, whisk eggs until frothy. Stir in ham, bell pepper and onion.
Coat medium skillet with oil; heat over medium heat. Pour in egg mixture. Stir once; cover. Reduce heat to low; cook until eggs are set and puffed.
Remove skillet from heat; sprinkle omelet with cheese. Cover until cheese is melted. Cut into 4 wedges.
