  • 3 tablespoons olive oil
  • 2 medium yellow onions, sliced
  • 8 ounces sliced fresh mushrooms
  • 8 slices HORMEL® Microwave Bacon, cooked according to package directions
  • 10 large eggs, beaten
  • 1/2 cup whipping cream
  • 1/2 cup shredded Swiss cheese
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 fresh or frozen 9-inch pie crust


  1. Heat oven to 350°F.
  2. In large skillet, heat oil. Add onions; sauté until translucent and lightly browned. Add mushrooms; cook until moisture is evaporated.
  3. Chop bacon; add to skillet. Remove from heat.
  4. In large bowl, mix eggs, cream and cheese. Add salt, pepper and mushroom mixture. Mix well; pour into pie crust.
  5. Bake quiche 45 minutes or until center is set.
