Ingredients

This recipe is recommended for 6 servings
  • 1 (12-ounce) can SPAM® Classic, cut into cubes
  • 4 large eggs
  • 2 tablespoons milk
  • 1/2 cup diced green bell pepper
  • 1 tablespoon butter or margarine
  • 6 CHI-CHI'S® 9 inch Burrito Tortilla
  • 1 cup shredded Cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1 cup salsa or taco sauce

Directions

  1. Heat oven to 400°F.
  2. In bowl, beat together SPAM® Classic, eggs, milk and bell pepper.
  3. In large skillet, melt butter. Add egg mixture; cook, stirring, until desired doneness.
  4. Fill each tortilla evenly with SPAM® mixture and 1/2 of cheeses. Roll up burritos; place seam-side-down in 12x8-inch baking dish. Sprinkle remaining 1/2 of cheeses over burritos.
  5. Bake burritos 5 to 10 minutes or until cheese is melted. Serve with salsa or taco sauce.
