  • 1 HORMEL® ALWAYS TENDER® Peppercorn Flavored Pork Tenderloin
  • 3 tablespoons butter
  • 1 (15-ounce) can artichoke hearts (not marinated), drained and cut in half

Directions

  1. Cut pork tenderloin into 1-inch-thick medallions.
  2. In large skillet, melt butter over medium-high heat until foamy. Add pork medallions. Cook 2 minutes on each side or until browned.
  3. Add artichokes to skillet; cover. Reduce heat to medium. Cook 10 to 12 minutes or until internal temperature of pork reaches 155ºF. and artichokes are hot.
