Ingredients

This recipe is recommended for 4 servings
  • 8 (8-inch) spinach and vegetable flour tortillas
  • 1 cup HORMEL® PILLOW PACK® Turkey Pepperoni
  • 1 (8-ounce) package shredded Colby Jack cheese
  • 1 (8.5-ounce) jar sun-dried tomatoes in oil, drained, chopped and blotted

Directions

  1. On flat surface, place 4 tortillas. Coat with cooking spray; turn over. Layer with pepperoni, cheese and sun-dried tomatoes. Cover with remaining tortillas; coat with cooking spray.
  2. Heat large nonstick skillet or griddle over medium-high heat. Cook quesadillas until lightly browned on both sides, cheese is melted and filling is hot.
