Ingredients

This recipe is recommended for 4 servings
  • 1/4 cup vegetable oil
  • 4 cups frozen country-style potatoes
  • 1 cup HORMEL® PILLOW PACK® Turkey Pepperoni
  • 1 1/2 ( ) cups shredded Colby Jack cheese

Directions

  1. In skillet, heat oil; add potatoes. With back of spatula, press down on potatoes. Cook 8 minutes or until bottom is crisp and brown. Turn in sections, re-forming "pancake" shape. Add small amount of oil, if needed.
  2. Add 1 layer pepperoni to potatoes; sprinkle with cheese. Cover. Cook 10 minutes or until bottom is browned and cheese is melted.
  3. Shake skillet to loosen mixture; slide onto serving dish. Cut into wedges with pizza cutter.
