Ingredients

This recipe is recommended for 6 servings
  • 3 pounds small red potatoes, unpeeled and cut into quarters
  • 1 (3.5-ounce) package HORMEL® Pepperoni, sliced
  • 3/4 cup creamy Italian or ranch salad dressing
  • 1/2 cup sliced green onions
  • 1/4 cup chopped fresh parsley

Directions

  1. In large pot with lid, boil potatoes in water until just tender; drain. Cool slightly.
  2. In gallon-size recloseable plastic food storage bag or large bowl, combine pepperoni, dressing, onions and parsley. Add warm potatoes to bag; seal. Shake until potatoes are evenly coated. Marinate at room temperature, shaking bag or stirring bowl occasionally, 1 hour.
  3. Refrigerate potato salad 2 hours or up to overnight to allow flavors to blend.
