Ingredients

This recipe is recommended for 6 servings
  • 3 cups cooked rice, cooled
  • 1/4 cup shredded Parmesan cheese
  • 1 large egg, beaten
  • 1/3 cup pesto
  • 1 1/2 cups shredded mozzarella cheese
  • 2 (5-ounce) cans Hormel® Chunk Breast of Chicken, drained and flaked
  • 1 Roma tomato, sliced

Directions

  1. Heat oven to 425°F. Coat 12-inch nonstick pizza pan with cooking spray.
  2. In bowl, combine rice, Parmesan cheese and egg; mix well. Press mixture firmly into pan. Bake 20 minutes.
  3. Spread pesto over crust; sprinkle with 1 cup mozzarella cheese. Arrange chicken, tomato and remaining 1/2 cup mozzarella cheese over pizza. Bake 10 minutes or until cheese is melted and bubbly.
