3 tablespoons olive oil
1 (20.7-ounce) package Hormel® Always Tender® Original Center Cut Pork Loin Filet
1/2 cup currant jelly
Directions
Heat oven to 400ºF.
In ovenproof skillet, heat oil over medium-high heat. Add pork loin; cook until browned well on all sides.
Meanwhile, in microwave-safe bowl, microwave jelly on HIGH (100%) 30 seconds or until jelly is liquefied. Remove skillet from heat; brush pork loin with jelly.
Place skillet in oven. Bake 20 minutes or until internal temperature of pork loin reaches 155ºF., turning pork loin and basting with jelly after 10 minutes and again after 15 minutes.
