1 (17-ounce) package Hormel® Always Tender® Original Center Cut Pork Loin Filet
1/2 cup dried plums, finely chopped
1/2 cup dried apricots, finely chopped
1/4 cup Carapelli Light Olive Oil, divided
Directions
Heat oven to 400ºF.
Butterfly pork loin by cutting lengthwise (almost but not through) to other side; spread pork flat. Cover with plastic wrap; pound with meat mallet to flatten.
In bowl, mix plums, apricots and 2 tablespoons oil. Spread mixture over pork loin. Roll up pork loin, enclosing fruit mixture. Secure roll with wooden picks pushed straight into roll and spaced about 1 inch apart.
In ovenproof skillet, heat remaining 2 tablespoons oil over medium-high heat. Add rolled pork loin. Cook until browned well on all sides; place skillet in oven. Bake 20 minutes or until internal temperature of pork reaches 155ºF.; slice into medallions.
