1 package Hormel® Always Tender® Original Center Cut Pork Loin Filet
5 tablespoons cold butter, divided
1 cup white wine
2 tablespoons capers
Directions
Cut pork loin into 1/2-inch-thick medallions.
In large skillet, melt 3 tablespoons butter over medium-high heat until foamy. Add pork medallions. Cook 3 minutes on each side or until browned. Reduce heat to medium; sauté 6 minutes longer or until internal temperature reaches 155ºF. Remove pork to warm plate; tent with aluminum foil.
Stir wine and capers into skillet, stirring browned bits from bottom of skillet. Bring to a boil; cook 4 minutes or until flavor is intensified. Reduce heat to medium-low; whisk in remaining 2 tablespoons butter, 1 tablespoon at a time. Stir until melted and smooth.
Remove skillet from heat; add pork medallions and accumulated juices. Reheat before serving.
