Ingredients

This recipe is recommended for 4 servings
  • 1/2 (16-ounce) package penne
  • 1/2 (13-ounce) jar PELOPONNESE® Roasted Red Peppers, drained and cut into strips
  • 2 cloves garlic, minced
  • 1 tablespoon vegetable oil
  • 1 cup HORMEL® Pepperoni, sliced
  • 1/2 cup chicken broth
  • 1/4 cup chopped fresh basil
  • 2 tablespoons shredded Parmesan cheese
  • 1/4 teaspoon coarsely ground pepper

Directions

  1. Cook penne according to package directions; drain.
  2. In large saucepan, sauté roasted peppers and garlic in oil over medium heat, stirring occasionally, 3 to 5 minutes. Add penne, pepperoni and broth. Cook until heated thoroughly. Sprinkle with basil, cheese and black pepper; toss.
