This recipe is recommended for 4 servings
2 tablespoons light olive oil
1 medium onion, chopped
1 green bell pepper, chopped
3 cloves garlic, minced
2 teaspoons ground cumin
2 teaspoons chili powder
1 (14.5-ounce) can diced tomatoes, undrained
1 (4.25-ounce) can CHI-CHI'S® Green Jalapenos Whole, drained and cut into strips
1 (15.5-ounce) can golden hominy, drained
1 (10.5-ounce) can condensed chicken broth, undiluted
2 (5-ounce) cans Hormel® Chunk Breast of Chicken, drained and flaked
1/3 cup chopped fresh cilantro
Directions
In large saucepan, heat oil over medium-high heat. Add onion, bell pepper and garlic; sauté until tender. Add cumin and chili powder; sauté 1 minute.
Stir remaining ingredients into saucepan; bring to a boil. Reduce heat; simmer 5 minutes. Serve over cornbread with desired toppings, if desired.
