Ingredients

  • 2 tablespoons light olive oil
  • 1 medium onion, chopped
  • 1 green bell pepper, chopped
  • 3 cloves garlic, minced
  • 2 teaspoons ground cumin
  • 2 teaspoons chili powder
  • 1 (14.5-ounce) can diced tomatoes, undrained
  • 1 (4.25-ounce) can CHI-CHI'S® Green Jalapenos Whole, drained and cut into strips
  • 1 (15.5-ounce) can golden hominy, drained
  • 1 (10.5-ounce) can condensed chicken broth, undiluted
  • 2 (5-ounce) cans Hormel® Chunk Breast of Chicken, drained and flaked
  • 1/3 cup chopped fresh cilantro

Directions

  1. In large saucepan, heat oil over medium-high heat. Add onion, bell pepper and garlic; sauté until tender. Add cumin and chili powder; sauté 1 minute.
  2. Stir remaining ingredients into saucepan; bring to a boil. Reduce heat; simmer 5 minutes. Serve over cornbread with desired toppings, if desired.
