Ingredients

  • 4 large eggs
  • 2 tablespoons 2% or skim milk
  • 2 tablespoons chopped green onions
  • 1/2 teaspoon salt
  • 1/4 teaspoon coarsely ground pepper
  • 4 slices Hormel® Natural Choice® Original Bacon, cooked and coarsely chopped
  • 1 cup shredded Swiss or Cheddar cheese
  • 4 potato lefse or flour tortillas, heated
  • 1/4 cup lingonberries or fruit salsa, if desired

Directions

  1. In bowl, stir together eggs, milk, onions, salt and pepper.
  2. Coat medium nonstick skillet with cooking spray. Heat skillet over medium-high heat. Add egg mixture. Cook, stirring frequently, 2 to 3 minutes or until eggs are almost set. Stir in bacon and cheese. Cook 1 to 2 minutes longer or until eggs are set and cheese is melted.
  3. Spoon 1/4 of egg mixture onto each warm lefse. Roll up; slice diagonally in half. Serve with lingonberries or fruit salsa.
