This recipe is recommended for 42 servings
  • 1 tablespoon butter or margarine
  • 6 large eggs, lightly beaten
  • 1 (12-ounce) package LITTLE SIZZLERS® Sausage Links, thawed and crumbled
  • 2 cups shredded sharp Cheddar cheese
  • 1 1/2 cups biscuit baking mix
  • 1/2 cup finely chopped onion
  • 1/2 cup finely chopped green bell pepper
  • 1/8 teaspoon garlic powder

  1. Uncooked breakfast balls can be frozen in a single layer. Before baking, thaw balls and bake as directed. After breakfast balls are cooked, you may also freeze in single layer. To bake, bake breakfast balls in single layer at 375ºF. or until heated thoroughly. Or, to microwave: Place balls in single layer on microwave-safe plate. Microwave on HIGH (100%) 30 seconds or until hot.

Variation: Place sausage mixture in lightly greased 13x9-inch baking dish. Bake 25 to 30 minutes at 350ºF. or until cooked through and golden brown. To serve, cut into bite-size pieces.

  1. Heat oven to 375ºF. Lightly grease baking sheet.
  2. In large skillet, melt butter over medium-high heat. Add eggs. Cook, stirring frequently, 4 to 5 minutes or until soft scrambled. Cool slightly.
  3. In large bowl, combine sausage, cheese, baking mix, onion, bell pepper and garlic powder. With clean hands, knead mixture until sticky and well combined.
  4. Stir scrambled eggs into sausage mixture until blended. Shape mixture into 1-inch balls. Place on baking sheet. Bake 20 minutes or until sausage is cooked through and bites are lightly browned. Serve with salsa, if desired.
