Ingredients

  • 1/4 cup butter
  • 2 cups Cure 81® Boneless Ham, diced
  • 3 cups frozen diced potatoes with bell peppers and onions, partially thawed
  • 10 large eggs
  • Salt and pepper, to taste

Directions

  1. In large nonstick skillet, melt butter over medium heat. Add ham and potatoes. Cook, turning frequently, until golden brown.
  2. In bowl, whisk together eggs, salt and black pepper; pour over ham and potatoes. Reduce heat to low. Cover; cook until eggs are set.
