Ingredients

This recipe is recommended for 8 servings
  • 1 (16.3-ounce) can refrigerated buttermilk biscuit dough
  • 8 slices HORMEL® BLACK LABEL® Bacon, cut in half
  • 1 tablespoon butter or margarine
  • 1/4 cup chopped green bell pepper
  • 1/4 cup chopped onion
  • 8 large eggs
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
  • 8 slices American cheese

Directions

  1. Bake biscuits according to package directions; keep warm.
  2. Meanwhile, cook bacon according to package directions; drain on paper towels.
  3. In medium skillet, melt butter over medium heat. Add bell pepper and onion; cook and stir 2 minutes or until tender.
  4. In small bowl, combine eggs, salt and black pepper; blend well. Add to skillet. Cook, stirring occasionally, until egg mixture is almost set but still moist.
  5. Split warm biscuits. Spoon egg mixture evenly onto bottom half of each biscuit. Top each with cheese and bacon. Cover with tops halves of biscuits.
