Ingredients

This recipe is recommended for 8 servings
  • 1 pound dried lentils, picked through
  • 2 celery stalks, tops cut into thirds
  • 1 carrot, cut in half
  • 1 coarsely chopped onion
  • 1 teaspoon minced garlic
  • 1 teaspoon salt
  • 1/8 teaspoon pepper
  • 8 cups water
  • 1 (7-ounce) can SPAM® Classic, cut into 1-inch pieces
  • 1 tablespoon white vinegar

Directions

  1. In stockpot, combine lentils, celery, carrot, onion, garlic, salt, pepper and water. Bring to a boil over medium-high heat. Reduce heat to medium-low. Cover; cook, stirring occasionally, 40 to 45 minutes or until lentils are tender. Remove from heat; cool slightly.
  2. In food processor bowl or blender container, combine 1/2 of lentil mixture; process until pureed. Return to stockpot.
  3. Add SPAM® Classic to pot; mix well. Bring to a boil; reduce heat to low. Cover; cook 15 minutes or until flavors are blended. Stir in vinegar. Ladle into soup bowls.
