Ingredients

  • 3 tablespoons light olive oil
  • 1 package HORMEL® ALWAYS TENDER® Teriyaki Flavored Pork Tenderloin
  • 2 (5.5-ounce) packages Thai peanut stir-fry noodles with seasoning

Directions

  1. Heat oven to 400ºF.
  2. In ovenproof skillet, heat oil over medium-high heat. Add pork tenderloin; cook until browned well on all sides.
  3. Transfer skillet to oven; bake 20 minutes or until internal temperature of pork reaches 155ºF. Let rest 5 minutes before slicing into medallions.
  4. Meanwhile, prepare noodles according to package directions; drain. Serve pork medallions with noodles.
