This recipe is recommended for 6 servings
4 CHI-CHI'S® 6 inch Fajita Tortilla
2 tablespoons butter, melted
2 cups shredded mozzarella cheese
1 1/2 cups Hormel® Cure 81® Sliced Ham, diced
1/2 cup sour cream
1/4 cup CHI-CHI'S® Thick & Chunky Salsa Medium 24 oz
3 large eggs, beaten
Directions
Heat oven to 350°F. Grease 10-inch pie pan.
Cut 3 tortillas in half. Place remaining tortilla in bottom of pie pan. Brush with small amount of butter. Arrange tortilla halves around edge of pan, round-side-up, overlapping to form pastry shell. Brush with remaining butter. Place 9-inch round cake pan inside pie pan. Bake 5 minutes; cool. Remove cake pan.
In bowl, combine cheese and ham. Stir in sour cream, salsa and eggs. Pour into tortilla shell.
Bake pie 55 to 60 minutes or until knife inserted into center comes out clean. Let stand 5 minutes. Serve with additional salsa and sour cream, if desired.
