Ingredients

This recipe is recommended for 6 servings
  • 4 large eggs, beaten
  • 2 cups shredded Cheddar and Monterey Jack cheese blend
  • 3/4 cup small-curd cottage cheese
  • 1 (4.25-ounce) can CHI-CHI'S® Diced Green Chilies, drained
  • 1/4 cup chopped onion
  • 1/4 cup chopped red or green bell pepper
  • 1 (15-ounce) can Hormel® Corned Beef Hash
  • 1/3 cup fine dry breadcrumbs or finely crushed buttery crackers

Directions

  1. Heat oven to 375°F. Lightly grease 9x9-inch baking dish.
  2. In bowl, combine eggs, shredded cheese, cottage cheese, chilies, onion and bell pepper; mix well.
  3. In separate bowl, combine hash and 1 cup egg mixture. Stir in breadcrumbs.
  4. Place hash mixture in baking dish. Top with remaining egg mixture. Bake 35 to 40 minutes or until set. Serve with salsa, if desired.
