Ingredients

  • 8 ounces Hormel® Prosciutto, thinly sliced
  • 3 cups green beans, trimmed and blanched
  • 3 cups baby greens
  • 1 cup thinly sliced fresh fennel
  • 1 (4-ounce) jar quartered artichoke hearts
  • 1/2 cup Peloponnese® Roasted Red Peppers Whole, cut into 1-inch strips
  • 6 ounces low-fat feta cheese, crumbled
  • 3/4 cup mustard vinaigrette
  • 6 tablespoons fresh basil, cut into fine strips

Directions

  1. In large bowl, combine prosciutto, beans, baby greens, fennel, artichokes, roasted peppers and cheese. Toss with vinaigrette. Sprinkle with basil.
