This recipe is recommended for 6 servings
8 ounces Hormel® Prosciutto, thinly sliced
3 cups green beans, trimmed and blanched
3 cups baby greens
1 cup thinly sliced fresh fennel
1 (4-ounce) jar quartered artichoke hearts
1/2 cup Peloponnese® Roasted Red Peppers Whole, cut into 1-inch strips
6 ounces low-fat feta cheese, crumbled
3/4 cup mustard vinaigrette
6 tablespoons fresh basil, cut into fine strips
Directions
In large bowl, combine prosciutto, beans, baby greens, fennel, artichokes, roasted peppers and cheese. Toss with vinaigrette. Sprinkle with basil.
