Ingredients

This recipe is recommended for 4 servings
  • 1/4 cup butter
  • 1 1/2 cups Hormel® Cure 81® Sliced Ham, diced
  • 1 1/2 cups frozen O'Brien potatoes
  • 6 large eggs

Directions

  1. In large skillet, melt butter over medium-high heat until foamy. Add ham and potatoes. Cook, stirring occasionally, until potatoes are nicely browned.
  2. Meanwhile, in small bowl, beat eggs until frothy.
  3. With spatula, flatten ham mixture; pour eggs evenly over mixture. Gently part eggs so some fall to bottom of skillet. Reduce heat to medium-low; cover. Cook 10 minutes or until eggs are firm.
