1 Hormel® Always Tender® Lemon Garlic Pork Loin Filet
3 tablespoons butter, divided
2 cloves garlic, sliced
Grated peel and juice of 1 lemon
Notes
To zest a lemon, gently remove yellow outer rind using a lemon zester, grater or vegetable peeler. One medium lemon yields 1 to 3 teaspoons grated peel and 2 to 3 tablespoons juice.
Directions
Cut pork loin into 1-inch-thick medallions.
In large skillet, melt 1 1/2 tablespoons butter over medium-high heat until foamy. Add pork medallions; cook 2 minutes on each side or until browned.
Reduce heat to medium. Sprinkle pork with garlic and lemon peel. Cover; cook 8 minutes or until internal temperature of pork reaches 155ºF. and garlic is softened. Transfer pork to warm serving plate.
Add remaining 1 1/2 tablespoons butter and the lemon juice to skillet. Cook and stir until hot. Pour sauce over pork.
