Ingredients

This recipe is recommended for 12 servings
  • 3 pounds Hormel® Always Tender® Original Flavor Pork Tenderloin
  • 2 ounces curry powder
  • 2 cups plain yogurt
  • 1 cup apricot jam
  • 2 ounces lemon juice
  • 2 tablespoons ground ginger
  • Hot, cooked rice
  • Chopped fresh cilantro

Directions

  1. Heat oven to 350°F.
  2. Cut pork tenderloins into 4 ounce slices; season with curry powder. Sear on flat-top grill until golden brown on both sides. Bake 30 minutes.
  3. To make sauce, in blender container, mix yogurt, jam, lemon juice and ginger; puree until smooth.
  4. Divide hot rice evenly among centers of 12 (10-inch) dinner plates. Top rice with pork tenderloin. Spoon sauce around rice and pork. Garnish with cilantro.
