Ingredients

This recipe is recommended for 4 servings
  • 4 boneless, skinless chicken breasts
  • 1 cup CHI-CHI'S® 16 oz Thick & Chunky Salsa Medium
  • 1 mango, pitted, peeled and cut into 1/2-inch chunks
  • 1 tomato, cut into 1/2-inch chunks
  • 3 tablespoons sliced green onions
  • 1/2 teaspoon grated lime peel
  • 1 tablespoon fresh lime juice
  • 2 teaspoons grated peeled gingerroot
  • 1 1/2 teaspoons vegetable oil

Notes

  1. If mangoes are unavailable, 2 peaches, peeled, pitted, and cut into 3/4-inch chunks, may be substituted.

Directions

  1. In large recloseable plastic food storage bag, combine chicken and salsa; seal bag. Turn several times to coat. Place bag in 13x9-inch pan. Refrigerate, turning bag occasionally, 3 hours.
  2. In large bowl, combine mango, tomato, onions, lime peel and juice, gingerroot and oil; mix well.
  3. Heat broiler.
  4. Remove chicken from marinade; discard marinade. Place chicken on broiler pan. Broil 7 to 8 inches from heat source 6 to 8 minutes on each side or until chicken is no longer pink in center. Serve chicken with tomato-mango relish.
