Ingredients

This recipe is recommended for 6 servings
  • 1/2 cup extra-virgin olive oil, divided
  • 6 HORMEL® ALWAYS TENDER® Pork Chops
  • 1 tablespoon chopped fresh rosemary
  • 18 ounces portobello mushrooms, sliced 1/2 inch thick
  • 2 small zucchini, sliced diagonally 1/4 inch thick
  • 6 slices red onion
  • 2 cups diced, seeded, peeled tomatoes
  • 1/4 cup thinly sliced green onions
  • 2 tablespoons chopped fresh basil
  • 1/4 cup balsamic vinaigrette
  • Salt and pepper, to taste

Directions

  1. Prepare grill.
  2. Brush 1/4 cup oil over both sides of pork chops. Season with salt and pepper.
  3. In 6-quart bowl, combine remaining 1/4 cup oil and the rosemary; stir in mushrooms, zucchini and red onion. Season with salt and pepper.
  4. Grill pork chops, turning once, 10 minutes or until medium doneness. Grill mushrooms, zucchini and red onion to desired doneness at same time.
  5. To make relish, in 4-quart bowl, combine tomatoes, green onions, basil and vinaigrette; season with salt and pepper. Mix well.
  6. Divide grilled vegetables evenly among centers of 6 plates. Top each with 1 pork chop. Serve with relish.
