Ingredients

  • 3 new red potatoes, cut into 1/2-inch chunks
  • 1 large yellow onion
  • 1/2 cup Italian salad dressing
  • 7 ounces Hormel® Pepperoni Sliced, chopped
  • 6 Peloponnese® Kalamata Pitted Olives, cut into quarters
  • 1/8 teaspoon salt
  • 1/8 teaspoon pepper
  • 12 (10-inch) flour tortillas
  • 4 ounces feta cheese, crumbled
  • Roasted red pepper strips
  • Diced tomatoes

Directions

  1. Heat oven to 400°F.
  2. In large bowl, toss together potatoes, onion and dressing; spread on baking sheet. Roast, stirring halfway through roasting, 35 to 40 minutes or until tender and lightly browned.
  3. In same bowl, toss together roasted potato mixture, pepperoni, roasted peppers, tomatoes, olives, salt and black pepper; divide evenly among tortillas. Sprinkle with cheese; roll up.
