Ingredients

This recipe is recommended for 8 servings
  • 3 ripe avocados, pitted, peeled and diced
  • 3 medium green onions, thinly sliced
  • 1 medium jalapeño pepper, seeded and finely chopped
  • 3 tablespoons chopped fresh cilantro
  • 1/4 teaspoon salt
  • 1/8 teaspoon freshly ground pepper
  • 2 cups Lloyd's® Shredded Pork in Original BBQ Sauce
  • 8 CHI-CHI'S® 6 inch Fajita Tortilla, heated
  • 3/4 cup shredded Monterey Jack cheese

Directions

  1. To make relish, in medium bowl, stir together avocados, onions, jalapeño, cilantro, salt and black pepper.
  2. Prepare pork according to package directions.
  3. Spoon about 3 tablespoons pork over each warm tortilla; top each with rounded tablespoon cheese and about 1/3 cup relish. Fold tortillas in half to serve.
