This recipe is recommended for 8 servings
3 ripe avocados, pitted, peeled and diced
3 medium green onions, thinly sliced
1 medium jalapeño pepper, seeded and finely chopped
3 tablespoons chopped fresh cilantro
1/4 teaspoon salt
1/8 teaspoon freshly ground pepper
2 cups Lloyd's® Shredded Pork in Original BBQ Sauce
8 CHI-CHI'S® 6 inch Fajita Tortilla, heated
3/4 cup shredded Monterey Jack cheese
Directions
To make relish, in medium bowl, stir together avocados, onions, jalapeño, cilantro, salt and black pepper.
Prepare pork according to package directions.
Spoon about 3 tablespoons pork over each warm tortilla; top each with rounded tablespoon cheese and about 1/3 cup relish. Fold tortillas in half to serve.
