This recipe is recommended for 8 servings
1 tablespoon extra-virgin olive oil
1 green bell pepper, chopped
1 onion, chopped
2 (10-ounce) cans Valley Fresh® White Chicken 3 oz., drained
1 (28-ounce) can crushed tomatoes
2 tablespoons Italian tomato paste
2 cloves garlic, minced
1 1/2 teaspoons dried basil leaves
1/4 teaspoon dried thyme leaves
1/4 teaspoon salt
1/8 teaspoon crushed red pepper flakes
6 cups hot, cooked brown rice
1/2 cup grated reduced-fat Parmesan cheese
Directions
In large saucepan, heat oil over medium heat. Add bell pepper and onion; cook 3 to 4 minutes or until softened.
Add chicken, tomatoes, tomato paste, garlic, basil, thyme, salt and red pepper flakes to saucepan; bring to a boil. Reduce heat; simmer 10 minutes.
Serve chicken mixture over hot rice. Sprinkle with cheese, if desired.
