Ingredients

  • 1 tablespoon extra-virgin olive oil
  • 1 green bell pepper, chopped
  • 1 onion, chopped
  • 2 (10-ounce) cans VALLEY FRESH® White Chicken, drained
  • 1 (28-ounce) can crushed tomatoes
  • 2 tablespoons Italian tomato paste
  • 2 cloves garlic, minced
  • 1 1/2 teaspoons dried basil leaves
  • 1/4 teaspoon dried thyme leaves
  • 1/4 teaspoon salt
  • 1/8 teaspoon crushed red pepper flakes
  • 6 cups hot, cooked brown rice
  • 1/2 cup grated reduced-fat Parmesan cheese

Directions

  1. In large saucepan, heat oil over medium heat. Add bell pepper and onion; cook 3 to 4 minutes or until softened.
  2. Add chicken, tomatoes, tomato paste, garlic, basil, thyme, salt and red pepper flakes to saucepan; bring to a boil. Reduce heat; simmer 10 minutes.
  3. Serve chicken mixture over hot rice. Sprinkle with cheese, if desired.
