1/4 cup plain yogurt
1 tablespoon orange juice
2 teaspoons honey
1 teaspoon poppy seeds
1/8 teaspoon ground ginger
1/8 teaspoon garlic powder, if desired
1 (10-ounce) can Valley Fresh® White Chicken 3 oz., drained
1 peach, peeled, pitted and sliced
1/2 cup green seedless grapes, cut in half
1/2 cup red seedless grapes, cut in half
1/4 cup shredded reduced-fat Monterey Jack cheese
Lettuce leaves
Directions
In bowl, mix yogurt, orange juice, honey, poppy seeds, ginger and garlic powder. Add chicken, peach and grapes; toss gently. Cover; refrigerate until ready to serve.
Serve chilled salad over lettuce. Sprinkle with cheese.
