Ingredients

  • 1/4 cup plain yogurt
  • 1 tablespoon orange juice
  • 2 teaspoons honey
  • 1 teaspoon poppy seeds
  • 1/8 teaspoon ground ginger
  • 1/8 teaspoon garlic powder, if desired
  • 1 (10-ounce) can VALLEY FRESH® White Chicken, drained
  • 1 peach, peeled, pitted and sliced
  • 1/2 cup green seedless grapes, cut in half
  • 1/2 cup red seedless grapes, cut in half
  • 1/4 cup shredded reduced-fat Monterey Jack cheese
  • Lettuce leaves

Directions

  1. In bowl, mix yogurt, orange juice, honey, poppy seeds, ginger and garlic powder. Add chicken, peach and grapes; toss gently. Cover; refrigerate until ready to serve.
  2. Serve chilled salad over lettuce. Sprinkle with cheese.
