Ingredients

  • 1 medium onion, diced
  • 1 tablespoon extra-virgin olive oil
  • 1 (4.25-ounce) can CHI-CHI'S® Diced Green Chilies, drained
  • 1 (15.5-ounce) can Great Northern beans, undrained
  • 1 (5-ounce) can VALLEY FRESH® White Chicken, undrained
  • 2 teaspoons chili powder
  • 1/4 teaspoon paprika
  • 1/8 teaspoon crushed red pepper flakes
  • 1/4 cup shredded Monterey Jack cheese with peppers

Directions

  1. In medium saucepan, cook onion in oil over medium-high heat 3 to 4 minutes or until translucent. Add chilies; cook 2 minutes longer.
  2. Add remaining ingredients except cheese to saucepan; reduce heat to medium-low. Simmer 10 to 15 minutes. Add cheese; stir until melted. Spoon into bowls to serve.
