Ingredients

  • 1 tablespoon Carapelli Light Olive Oil
  • 1 medium yellow onion, chopped
  • 6 cups water
  • 6 Herb-Ox® Chicken Cubes
  • 2 teaspoons ground cumin
  • 1 teaspoon lemon-pepper seasoning
  • 2 (10-ounce) cans Valley Fresh® White Chicken 3 oz., drained
  • 1 (15-ounce) can hominy, drained
  • 1 (15-ounce) can Great Northern beans, drained and rinsed
  • 1 (7-ounce) can white corn
  • 1 (4.25-ounce) jar CHI-CHI'S® Diced Green Chilies, drained
  • Gluten-free tortilla chips
  • Shredded reduced-fat Monterey Jack cheese

Directions

  1. In large saucepan, heat oil. Add onion; sauté 5 minutes or until softened. Add water, bouillon, cumin, lemon-pepper and chicken; bring to a boil. Reduce heat; cover. Simmer 5 minutes.
  2. Add hominy, beans, corn and chilies to saucepan. Cook 10 minutes or until heated thoroughly. Top with chips and cheese, if desired.
