Ingredients

  • 1 cup hot water
  • 1/2 cup creamy peanut butter
  • 3 tablespoons cider vinegar
  • 2 tablespoons hoisin sauce
  • 1 tablespoon soy sauce
  • 4 teaspoons HERB-OX® Beef Instant Powder, divided
  • 1/2 teaspoon crushed red pepper flakes
  • 1 tablespoon peanut oil
  • 1 slice minced peeled gingerroot or 1/2 teaspoon ground ginger
  • 1 red bell pepper, chopped
  • 1 yellow summer squash, chopped
  • 2 ounces peapods, chopped
  • 3 green onions, chopped
  • 12 ounces spaghetti, cooked and drained
  • 1 cup chopped fresh cilantro
  • 1/2 cup peanuts , chopped

Directions

  1. To make peanut sauce, in bowl, mix hot water, peanut butter, vinegar, hoisin sauce, soy sauce, 2 teaspoons beef granules and the red pepper flakes.
  2. In large pan, heat oil; add remaining 2 teaspoons beef granules and the gingerroot. Cook about 30 seconds. Add bell pepper, summer squash, peapods and onions; cook 2 minutes longer or until vegetables are slightly wilted and heated thoroughly.
  3. In serving bowl, toss together spaghetti and peanut sauce. Top with vegetables. Sprinkle with cilantro and peanuts.
