Autumn Pot Roast with Orange-Glazed Sweet Potatoes

  • 1 (2.5- to 3-pound) package Sutton & Dodge® Beef Chuck Tender Roast
  • 2 1/2 pounds sweet potatoes, peeled and cut into 1-inch pieces
  • 1 yellow onion, cut into 8 wedges
  • 1/2 cup raisins
  • 1 cup water
  • 1/2 cup orange juice concentrate, thawed
  • 1/4 cup firmly packed brown sugar
  • 2 tablespoons Herb-Ox® Beef Instant Powder
  • 1/3 cup cold water
  • 1/4 cup all-purpose flour
  • 2 tablespoons grated orange peel

Step-by-Step

  1. Buy 1 package Sutton & Dodge® Beef Chuck Tender Roast.

  2. Coat 5- to 6-quart slow cooker with cooking spray. Place roast in slow cooker. Arrange sweet potatoes and onion around and on top of roast. Sprinkle with raisins.

  3. In small bowl, stir together 1 cup water, the orange juice concentrate, brown sugar and bouillon; pour over roast. Cover; cook on LOW setting 10 to 12 hours or until beef and vegetables are tender.

  4. Remove roast from slow cooker; place on cutting board. Cover to keep warm. In small bowl, whisk together cold water and flour; stir into vegetables and juices in slow cooker. Stir in orange peel; cover. Cook on HIGH setting 15 minutes or until thickened. Slice roast.

  5. Serve this roast with vegetables and gravy.
