  • 1 (1 1/2-pound) package Sutton & Dodge® Beef Skirt Steak
  • 1 tablespoon light olive oil
  • 2 teaspoons minced garlic
  • 1 1/2 teaspoons ground cumin
  • 1 1/2 teaspoons ground coriander
  • 1 1/2 teaspoons coarsely cracked black pepper
  • 1 teaspoon salt
  • 1 teaspoon paprika
  • 1/2 teaspoon ground cinnamon

Step-by-Step

  1. Buy 1 package Sutton & Dodge® Skirt Steak.

  2. In small bowl, stir together all ingredients except steak.

  3. In 13x9-inch baking pan, rub all surfaces of steak with spice mixture; cover. Refrigerate 5 to 8 hours.

  4. Prepare grill for direct medium-high heat; position rack 5 to 6 inches from heat source. Lightly oil grill rack. Place steak on grill; cover. Grill, turning once, 6 to 8 minutes for medium-rare doneness (140°F. to 150°F.). Let stand 5 minutes. Thinly slice across grain.

  5. Serve steak with sautéed carrots and flatbread.
