This recipe is recommended for 8 servings
9 long lasagna noodles
1 package Jennie-O Turkey Store® Lean Ground Turkey
2 teaspoons finely chopped garlic
1 (26-ounce) jar spaghetti sauce
1 (15-ounce) container ricotta cheese
2 (8-ounce) cups shredded mozzarella or Italian cheese blend, divided
1 large egg, lightly beaten
1 (10-ounce) package frozen spinach, thawed and well drained
1/4 teaspoon crushed red pepper flakes
1/8 teaspoon ground nutmeg
Directions
Heat oven to 350ºF.
Cook lasagna noodles according to package directions; drain.
Meanwhile, in large skillet, cook turkey and garlic over medium heat until turkey is no longer pink. Add spaghetti sauce. Simmer, stirring occasionally, 10 minutes.
In bowl, combine ricotta cheese, 1 cup mozzarella cheese, the egg, spinach, red pepper flakes and nutmeg; mix well.
In bottom of 13x9-inch baking dish, spread about 3/4 cup turkey mixture. Layer with 3 noodles. Top with 1 cup turkey mixture and 1/2 of ricotta mixture. Repeat layers, ending with noodles and turkey mixture. Cover with aluminum foil.
Bake lasagna 50 minutes or until bubbly. Remove foil. Sprinkle with remaining 1 cup mozzarella cheese. Bake 5 minutes longer or until cheese is melted. Let stand 10 minutes before serving.
