Ingredients

  • 1 teaspoon olive oil
  • 1/2 package Jennie-O Turkey Store® Lemon Garlic Turkey Tenderloin, cut into thin strips
  • 1 cup shredded carrots
  • 1 cup shredded yellow summer squash
  • 1/2 cup chopped green onions
  • 1 teaspoon chopped fresh oregano
  • 1/2 cup cherry tomatoes, cut in half
  • 1/2 cup white wine
  • 4 cups hot, cooked fettuccine
  • 1/4 cup shredded Parmesan cheese

Directions

  1. In large skillet, heat oil over medium-high heat. Add turkey; sauté 4 minutes or until lightly browned. Add carrots, summer squash, onions and oregano. Cook, stirring frequently, 4 minutes longer. Add tomatoes and wine; simmer 2 to 3 minutes more or until liquid is reduced. Toss with hot fettuccine. Sprinkle with cheese before serving.
